500ml cake flour 250ml cornflour MAIZINA 180ml castor sugar 250g butter 50g Bournville chocolate 60ml dried currants
Mix flour, Maizina and sugar in the bowl of your mixer or food processor. Switch on and add butter in small chunks. Mix well until the dough is formed. Add chopped chocolate and currants and mix.
Divide the mix into 2. Press each into a buttered shallow 20cm cake tin or make 2 circular shapes on a buttered baking tray. Prick with a fork and score into 8 wedges. Bake at 160 degrees for 30 – 40 minutes till a pale golden brown. Cool. Wrap carefully in Greaseproof paper and store in an airtight container.
